Banana Muffins

FOR THE DRY INGREDIENTS
1 and 1/2 cups all-purpose flour
1 tsp baking powder, baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
FOR THE WET INGREDIENTS
1 and 1/2 cups mashed bananas (3–4 ripe bananas)
6 Tbsp melted butter or coconut oil
2/3 cup brown or coconut sugar
1 large egg
1 tsp vanilla extract
2 Tbsp milk
Optional: 1 cup chopped walnuts or chocolate chips
DIRECTIONS
1. Preheat oven to 425°F. Prepare a 12-count muffin pan.
2. Whisk dry ingredients in a bowl. In another bowl, mash bananas and beat in butter, sugar, egg, vanilla and milk.
3. Combine wet and dry ingredients; fold in optional add-ins.
4. Fill muffin liners to the top. Bake at 425°F for 5 minutes, then reduce to 350°F, baking 16–18 minutes.
5. Cool for 5 minutes in the pan, then transfer to a wire rack.
